Glenmorangie's giraffe-tall stills — the height of an adult giraffe, the distillery likes to note — give an unusually light, refined spirit that the house then dresses in extraordinary wood. It pioneered modern cask finishing in the 1990s, running its delicate Highland malt through port, sauternes and sherry casks, and still buys slow-grown Ozark oak for its bourbon barrels. The result: whisky as perfume — citrus, peach and vanilla in high definition.
