The big two
- Ex-bourbon (American oak) — vanilla, honey, coconut; the default home of Scotch
- Sherry butts (mostly European oak) — dried fruit, walnut, spice, mahogany colour
Size matters too: smaller casks mean more wood contact per litre and faster maturation — a quarter cask races, a big sherry butt strolls.
