Behind the churchyard in Rothes, this distillery runs its stills unusually slowly and ferments unusually long, chasing a silky, aromatic spirit that goes almost entirely into sherry-seasoned oak. Once famous for vintage-dated releases in its grenade-shaped bottle — a shape borrowed from the sample flasks of the tasting room — The Glenrothes now builds its Soleo Collection entirely from first-fill sherry casks: vanilla, ripe berries and cinnamon in polished balance.
