White wine is usually about freshness, so the juice is protected from oxygen. Grapes are often pressed whole, the juice settled, then fermented cool to preserve delicate aromatics.

Skin contact is a choice
Most whites are pressed off their skins immediately. Leave white grapes fermenting on the skins and you get an “orange”/amber wine — tannic and textured, like a white made like a red.
