How soil really helps
Soil's biggest jobs are physical, not flavour-magic: managing water and warmth, and controlling how vigorously the vine grows. Vines famously make better wine when they have to struggle a little in poor soil.

The struggle principle
Rich, fertile soil grows lots of leaves and dilute grapes. Poor, well-drained soil stresses the vine, so it puts energy into fewer, more concentrated berries.
