Cool vs warm
Climate is the master switch. In simple terms, cooler regions make lighter, higher-acid, lower-alcohol wines; warmer regions make riper, fuller, higher-alcohol wines with softer acidity.
Cool climate
e.g. Mosel, Chablis- High acidity, low alcohol
- Green/citrus & tart-red fruit
- Lighter body, more 'nervy'
Warm climate
e.g. Barossa, Maipo- Lower acidity, high alcohol
- Ripe, jammy, tropical fruit
- Fuller body, softer
