Delicate, perfumed, prized
Pinot Noir makes the most ethereal of great reds: pale, perfumed and silky rather than big and bold. It's also notoriously difficult to grow — thin-skinned and fussy about climate — which adds to its mystique and price.
- Its home is Burgundy, where single-vineyard bottlings fetch staggering prices.
- It needs a cool climate — too much heat and it loses its delicacy.
- Light in colour and tannin, but high in perfume and acidity.
