A grape shaped in the cellar
Chardonnay's relatively neutral fruit makes it the ultimate winemaker's grape. Beyond climate, three cellar decisions define its style: oak, malolactic conversion, and lees handling.

Climate sets the frame
Cool (Chablis) → green apple, citrus, high acid, often unoaked. Warm (much of California) → peach, melon, tropical, rounder. The cellar then adds texture and flavour.
