Place vs recipe
Europe’s appellations (AOP, DOC, DO…) regulate far more than where a wine is from — they dictate the permitted grapes, yields, ripeness and often winemaking. New World origin schemes mostly just guarantee the place.
Old World (e.g. AOP)
Place + recipe- Defines grapes, yields, methods
- Labelled by region (Chablis = Chardonnay)
- Tradition is codified in law
New World (e.g. AVA, GI)
Place only- Just defines a boundary of origin
- Free to plant any grape
- Labelled by grape variety
